GOLDEN
The first syrup of the maple season, Golden-Delicate Grade syrup is the mildest of all the syrups with a light, golden color and a flavor that is subtle with buttery hints of vanilla. Golden-Delicate Syrup is popular as an ice cream, fruit, oatmeal or yogurt topper and great for home confections or as a table syrup.
AMBER
Produced mid-season when the temperatures begin to warm, Amber-Rich Grade syrup is slightly darker than golden and is rich, smooth and full-bodied delivering the classic maple flavor. Amber-Rich Syrup is the best grade for all-around use in the kitchen and on the table; drizzle on pancakes; top fruit or ice cream, add to coffee or tea or even use it for cooking or preparing vinaigrettes. This is what most people think of when they think maple.
DARK
Produced when the days become warmer and longer, Dark-Robust Grade syrup is stronger and more intense than Amber-Rich. With a more caramelized maple flavor, Dark-Robust Syrup is popular for cooking and can replace brown sugar in any recipe. It is also perfect as a glaze for meats and vegetables, salad dressings or a variety of baked goods.
VERY DARK
Produced at the very end of the harvest season, Very Dark-Strong Syrup has an intense flavor and has echoes of molasses. While it is still grade A and can be used for home consumption, it is also used by manufacturers as an ingredient in baked goods, sauces, beverages, beer, granola and more. It holds up well in cooking and transfers the flavor to the final product.
